Thức ăn đường phố phát triển tràn lan, tự phát, dẫn đến không đảm bảo vệ sinh an toàn thực phẩm, luôn tiềm ẩn nguy cơ gây ngộ độc thực phẩm. Mục tiêu của đề tài nhằm khảo sát thực trạng ô nhiễm vi khuẩn Escherichia coli và một số yếu tố liên quan tới ô nhiễm vi khuẩn E.coli trên bàn tay của người chế biến thức ăn đường phố. Nghiên cứu mô tả cắt ngang, 98 cơ sở bán thức ăn đường phố tại thành phố Pleiku – Gia lai từ tháng 8/2013 đến tháng 6/2014. Mỗi cơ sở chọn 1 người trực tiếp chế biến thức ăn để lấy mẫu bàn tay và phỏng vấn.Kết quả có 24,5% bàn tay người chế biến bị nhiễm vi khuẩnE.coli, trong đó 6,1% bàn tay nhiễm vi khuẩn E.coli nhóm gây bệnh đường ruột enteropathogenic E. coli. Có 71,4% cơ sở bán thức ăn đường phố sử dụng nguồn nước sạch. Có 7,1% cở sở bánthức ăn đường phố vệ sinh đạt yêu cầu theo thông tư 30/2012/TT-BYT. 30,6% người trực tiếp chế biến được khám sức khỏe định kỳ; Có 22,5% người có tham gia lớp tập huấn Vệ sinh an toàn thực phẩm 5,1% người thao tác đúng vệ sinh; 38,9% người có đeo găng tay một lần khi tiếp xúc với thức ăn; 54,1% người có cắt ngắn móng tay; 41,8% người đeo trang sức khi chế biến thức ăn. Điều tra yếu tố liên quan, có ý nghĩa thống kê giữa người tập huấn vệ sinh an toàn thực phẩm và tỉ lệ nhiễm E.coli trên bàn tay người chế biến thức ăn đường phố. Ngoài ra điều tra thêm các yếu tố khác, tuy nhiên, sự khác biệt về tỉ lệ nhiễm giữa các nhóm không có ý nghĩa thống kê. Cần Tăng cường giám sát cơ sở buôn bán thức ăn đường phố, khám sức khỏe định kỳ và tập huấn vệ sinh an toàn thực phẩm cho người chế biến thức ăn đường phố. Cần có những nghiên cứu quy mô hơn, để có thể xác định rõ yếu tố nguy cơ gây ô nhiễm vi khuẩn E.coli trên bàn tay người chế biến thức ăn đường phố.
Summary:
Street food is wide spreading and individually initiated which leads to unhygienic and unsafe food. This also constantly poses potential risk of food poisoning. The objectives of this study were to assess the situation of Escherichia coli (E. coli) infection on the hands of people who prepare and cook the street food and their associated factors. A cross-sectional study on 98 street food settings in Pleiku city, Gia Lai province was conducted from August 2013 to June 2014. At each setting, one person who was directly involved in food preparation was selected for interview. The results showed 24.5% hands of people who directly prepared and cooked food was infected with E. coli, of which 6.1% hands was infected with Enteropathogenic E. coli group. Seventy-one point four percent (71.4%) of street food settings used clean water. Seven point one percent (7.1%) of street food stores met the standards as per the Circular 30/2012/TT-BYT. Thirty point six percent (30.6%) participants had routine medical check-up; 22.5% participants had attended training on food safety; 5.1% participants had correct hygiene practice; 38.9% participants wore gloves while preparing food; 54.1% participants had clean short finger nails; 41.8% participants wore jewelry while preparing food. Assessment of associated factors, statistically significant between the getting trained on food hygiene and food safety with proportions of E. coli infection. Assessment of associate other factors, however, the difference in infection rates between the groups was not statistically significant. There is a need to enhance surveillance in street food settings; to promote routine medical check-up and to provide training on food safety for street food handlers. More magnitude and well-designed studies are needed to determine the risk factors causing hand infection with E. coli in food handlers working in street food settings.
